Butternut squash is the most popular winter squash at Juniper Hill Farm. When the time is right, we go to the feilds every afternoon and only pick the most tan and ripe-looking pieces, falling off the vine to be on your table. When ready, a butternut’s flesh should be a deep orange. It can be baked, mashed, served as soup, or stuffed, and will bring color and nutrition to a hearty meal. Butternut pairs well with apples, brown sugar, butter, maple syrup, pecans, sage, thyme, and the seeds can be toasted like pumpkin seeds.
